this morning i am faced with two very pressing things:
1. it's suddenly basically summer here in new york (meaning everyone should start adding a squeeze of lemon to everything).
2. in three days stoopie will be getting married (meaning i will need to fit into a dress and not look like i've been only eating cheese and scallion pancakes for the past week).
so i made a chickpea salad (inspired by the one that eggboy and i had at bklyn larder a few weeks ago) in an effort to celebrate summer in my mouth and fart away some of my bodily mass by saturday. i mean. eat healthy. it's really delicious and really tasty and easy peasy to make.
lemon + dill chickpea salad
makes two servings.
1 can of chickpeas, rinsed
the juice from 1 lemon
2 sprigs of dill
2 tsp olive oil
salt + pepper to taste
toss all of the ingredients together and enjoy!
