everything bagel mac and cheese

Ok, as long as no one we know gets surprised engaged and decides to surprise go to Hawaii and get married at the last minute, we are done going to weddings for a few good months, which I’m kind of sad about because the Rent the Runway dresses I’ve been finding have been off the hook. And I love a good dance party. And the far off destinations that we get to go to. This past weekend we were right on the Idaho/Wyoming border for an Eggcousin wedding at a ranch that made me want to go back and watch Hey Dude reruns. (Was that a good show? Or just an obstacle on the way to Bug Juice and Double Dare? Will we ever know?)

It was my first time in Wyoming and I gasped when I saw the scenery. Mountains are so good. On our first night we stayed at the adorable Anvil Hotel in Jackson and had a delicious and inspiring crispy honey chicken with creamed corn at Glorietta. I pretty much never order chicken at a restaurant unless it’s schnitzeled but our server said get the chicken so we got the chicken and it was one of the best decisions we’ve made at a restaurant all year. The next morning we hiked up Snow King mountain, ate an apple and peanut butter at the top, and then came down and drove across a Teton to the ranch in Idaho for the wedding. Wowee zowee, it was beautiful. We rode horses, saw a bunch of wildflowers, sat around a campfire, and Eggboy played music for the ceremony!! It was the best. 

Now we’re back, just in time for National Macaroni and Cheese Day!!!! Which is the only food holiday besides donut day that I take seriously for now. It’s on Saturday. And I know, it’s kind of dumb to have it fall in the middle of summer when we should be taking advantage of fresh summer vegetables, but I don’t make the rules. So here is a recipe that I’ve been making in my low key mission to everything bagel (v.) all of the things. It was partly inspired by Alex and Sonja’s Everything Bagel Pasta, which looks sooo good. And the things that make this mac bagel-y are: 

-Cream cheese in the cheese sauce, which adds a delicious tang 

-Chives, because chive cream cheese is the best cream cheese

-Just a tiny bit of barley malt syrup, a sweet sticky substance that’s a key ingredient in making bagels taste bagel-y 

-Tons of everything bagel seasoning on top. It seems like a lot when you’re making it but it gets all crunchy in the oven and adds perfect texture. (I’ve included measurements below to make your own seasoning but you can certainly use store bought. If you use storebought: sprinkle it on to taste because some of them, like the one from Trader Joe’s, are extreeeeemely salty.)

 

-And if you’re feeling extra, sub out the panko breadcrumbs for bagel crumbs!

-And for bonus points: add hot dogs or veggie dogs and then it’s bagel dog mac and cheese.

…And there is no bagel-driven reason for the ketchup. I just like it.


Everything Bagel Mac and Cheese

Serves 4

Ingredients

1/2 lb (226g) pasta, I prefer rigatoni
Olive oil
1/4 c (68g) unsalted butter
1/2 yellow onion, finely chopped
Kosher salt
1/4 c (33g) all-purpose flour
2 1/2 c (590g) whole milk
4 oz (113g) cream cheese
4 oz (113g) white cheddar or gruyere or a mix of both, shredded
1 oz (28g) parmesan, shredded
1 1/2 tsp barley malt syrup, optional
Crushed red
Black pepper
1/2 c chopped chives or scallions
Bonus points: 2 cut up cooked hot dogs or veggie dogs

Topping

3/4 c (75g) panko breadcrumbs
1 tb unsalted butter, melted
1 tb each: sesame seeds, poppy seeds, dried minced garlic, dried minced onion
A few pinches of Kosher salt

Ketchup, for serving
 

Clues

Preheat the oven to 375ºF.

Prepare the pasta according to the directions on the box, cooking for one minute less than directed. Drain, toss with a drizzle of olive oil, and set aside. 

In a large pot, melt the butter over medium high. Add the onions and a pinch of salt and cook, stirring, until soft, 5-7 minutes. Stir in the flour and cook for 1 minute. Add 1 cup of the milk and cook, whisking continuously, until thickened, and then repeat with another cup, and then the remaining 1/2 cup. Add the cheese and stir until melted, and then add the barley malt syrup (if using), a few pinches of crushed red pepper, a few turns of black pepper, and salt to taste. Stir in the pasta, chives, and hot dogs, if using. Transfer to an 8” baking dish or a dish that’s a similar size. In a medium bowl, mix together the breadcrumbs and melted butter and then distribute it over the top of the mac and cheese. Combine the sesame seeds, poppy seeds, dried minced onion, dried minced garlic, and salt in that same medium bowl and sprinkle it liberally over the top.

Bake for 25 minutes, or until golden brown on top. Let cool slightly and then serve with ketchup.

shakshuka o's

Sugar beet harvest is officially dunzo!!!!!!!!!! Eggboy can finally catch up on sleep, there’s a celebratory brisket in the oven, and I still have three entire seasons of Pretty Little Liars to watch, which means that harvest wasn’t nearly has long as it could have been. Last year they were still harvesting on October 20th so the fact that this year they finished on the 13th is reason to party extra hard. We’re having the whole crew over tonight for brisket, Mac and cheese, corn bread, live accordion music by Sheila, and the presentation for the award for whoever transported the last truck of beets from the field to the plant. Then E-boy will probably sleep until it’s time to go to the hockey game tomorrow night. 

Here’s a little recipe that is partially Eggboy’s invention! It’s a riff on the Shakshuka Couscous from Molly on the Range that was invented when I was trying to figure out if we should have Shakshuka or couscous for dinner one night and Eggboy just said the two words together as if they were one dish. It was the same tone in which he suggested the train wreck that was “chicken pot babka” only this time it actually sounded like a good idea. So I went with it and it turned out to be an awesome heartier take on Shakshuka, almost like one of those one pot pasta recipes that are all over the internet. And then when I was in Maine a couple of months ago demoing this dish at Stonewall Kitchen, my friend Jeff (the same Jeff who dragged me for Tahdig Shakshuka) was all why isn’t this actually Shakshuka O’s?? That’s way more fun. And suddenly I was transported back to my Hello Kitty days when the most amount of vegetables I’d eat in one meal would be the carrots and onions in an individually sized microwaveable chef boyardee cup. And the most amount of meat I’d eat would be the tiny meatballs therein... 

And so a very nostalgic dish was born! 

The only special ingredient you need here is large ring pasta, which occupies most pasta aisles I think. I’m sure small rings or stars would work (although I don’t think stars would have the correct mouthfeel), and I really wanted to track down that Manischewitz Hebrew letter pasta since my Hebrew lessons start today (!!!!!) but alas it was discontinued years ago. Sad trombone! This dish is so much fun to eat though, and perfect for rainy nights when you don't feel like going to the store because all of the ingredients are super easy to have on hand (like my endless tub of feta that should have expired months ago but hasn't yet). If you thought that spaghetti-o's was at the height of its tastiness, you clearly haven’t had it with a soft cooked egg mingling its way into the sauce, making it rich and creamy. And with cumin and feta and harissa and all of the other tasty additions that make shakshuka so special. Get on this you guys! Happy weekend!! 

shakshuka o's

makes 4 servings

ingredients

3 tb olive oil, plus more for drizzling

1 medium yellow onion, finely chopped

2 carrots, finely chopped

kosher salt

3 cloves garlic, minced

1 tb ground cumin

2 tsp harissa, or more to taste

1/2 tsp paprika

black pepper

crushed red pepper

1 tb tomato paste

1 can or carton (28 oz) chopped tomatoes

1 tsp sugar

3/4 c large ring pasta

1/2 c vegetable stock

4 large eggs

a few handfuls of crumbled feta

a handful of chopped fresh flat-leaf parsley or cilantro or a mix

clues

in a large skillet, heat the 3 tablespoons of olive oil over medium heat. add the onion, carrots, and a pinch of salt and cook, stirring, until soft and translucent, 10-12 minutes. add the garlic, cumin, harissa, paprika, a good pinch of salt, a few turns of black pepper, and a pinch of red chili flakes and cook until it's all dreamy and smelly, about 2 minutes. stir in the tomato paste, then the chopped tomatoes and sugar. reduce the heat to low, stir in the pasta rings and broth, cover and simmer for about 8 minutes, until the pasta is al dente.

create 4 little wells and crack in your eggs. cover and simmer until the whites are cooked but the yolks are still runny, begin checking at 5 minutes. sprinkle the eggs with a little salt and black pepper, drizzle the whole dish with olive oil, top with feta and herbs, and serve.

preserved lemon pappardelle with fried pine nuts, feta, and mint

molly on the range goes to print today. hallelujah! all of my fears about typos and clarity were at an all time high this week. i started to second guess some things that i thought were funny when i first wrote them and wondered if they weren't funny at all. at first i thought, well, nothing is funny after you've read it 5,000 times. but then i realized that pitch perfect 2 is still funny after watching it 5,000 times. so that's what kept me up at night this week. i started drafting answers to questions that i'm afraid people will ask when the book comes out, in case they don't understand things. i'm probably being silly, or maybe i'm just paranoid because i'm extraordinarily sleep deprived. but in general i am very excited to be one step closer to have all of my favorite recipes in a physical object that i can splatter paint with soy sauce, give as gifts, and just pet like a small animal.

the one other thing that kept me up at night this week was tel aviv nightlife. i cashed in all of my frequent flier miles for a little college reunion with brian and rob, my bridesmen, and we did some of the best most shameless dancing we've ever done. (it was probably more like stylized jumping than dancing, but whatever.) what i like about the dancing in tel aviv is that you don't have to get dressed up or wait on a long dumb line, there's just an abundance of chill bars with chill humans that aren't overcrowded and which happen to have great djs in one section where you can dance like tomorrow is the end of the world if you want. (fave spots: sputnik, radio, and kuli ama.) it was such a great time! but now i'm so happy to be home, right in time for wheat harvest! and also our garden is like whazzup! 

in the summer i love fresh pasta with just fresh herbs, olive oil, and lemon. leave the heavy sauce for sweater weather, these days i'm all about things from the garden tossed about and served next to a sausage or vegetable from the grill. my little macaroni eggs (well, now they are big macaroni, as you can see!) make this pasta so beautiful and yellow, and i'm using the fresh pasta recipe from my friend emiko's stunning new book, florentine (i'm giving away a copy of it over here, btw)the pasta is surprisingly easy to make and totally luxurious, but if you're short on time or just can't be bothered to get out your pasta maker, the combination of flavors here is still worth ripping apart your mint plant for. it's a combination i cannot get enough of these days: feta, mint, olive oil, nuts, spicy stuff, and either a fresh squeeze of lemon or chopped preserved lemon (which lends a funkier pickle-y flavor that i love, just make sure to rinse them otherwise this will be too salty). it's sort of like a deconstructed pesto situation that's just gotten back from summer vacation in morocco. i'm using preserved lemons from trader joe's, but you can also make your own. and california olive ranch's rich and robust olive oil is my go-to for this since its oomph factor can really hang well with the strong personalities of feta and lemon. 

this is a pasta i would gain 300 pounds for, fyi. 


preserved lemon pappardelle with fried pine nuts, feta, and mint

serves 4

ingredients

kosher salt

1 lb pappardelle (store bought or use emiko’s recipe, below)

1/3 c california olive ranch rich and robust olive oil

4 cloves garlic, minced

1/2 c raw pine nuts

4 slices preserved lemon, rinsed and finely chopped

1 c lightly packed fresh mint, chopped

Black pepper

1 c crumbled feta

Crushed red pepper

clues

bring a large pot of water to a boil, salt it ferociously, and cook the pasta according to the manufacturer’s directions. 

While the pasta is cooking, heat the olive oil in a large skillet over medium heat until a drop of water sizzles when flicked across the surface. Add the garlic and pine nuts and cook, stirring, until they’re lightly browned, about 2 minutes. Add the preserved lemon and half the mint and cook, stirring, for another 1-2 minutes. Add the cooked pasta to the pan, reduce the heat to low, and toss the pasta to coat it evenly in the mixture. Give it like 20 turns of black pepper. Top it with the remaining fresh mint, the feta, and a few pinches of crushed red pepper. Serve immediately and enjoy. 


emiko's pappardelle

from emiko davies' book florentine

serves 4

ingredients

200g plain flour

200g semolina, plus extra for dusting

4 eggs

Sift the flour and semolina onto a flat work surface and create a well in the middle with your hands. Crack the eggs into the well. Gently beat the eggs with a fork in a circular motion until they become creamy. Begin incorporating the flour and semolina little by little until it becomes too difficult to use the fork and then gather the dough with your hands. Knead for about 10 minutes or until it becomes elastic. Let the dough rest, covered so it does not dry out, for at least 30 minutes.

Divide the dough into two or three portions. With a pasta rolling machine or a rolling pin on a floured surface, roll out the dough until about 1 mm thick or until you can see your fingers through the other side. If rolling by hand, roll from the centre outwards.

The noodles should be cut to about 2–2.5 cm wide. Fold the dough lengthways over itself three or four times (dust with semolina between each fold so they do not stick) and then cut across the short side of the folded pasta. Use a sharp knife for a straight edge or a fluted pastry wheel cutter for a ruffled effect (good for catching sauce). Unroll the pasta, shaking it out, dust generously with semolina and shape into little ‘nests’ of equal portions – 100 g is equal to one serving. Cover under a dish towel or plastic wrap until ready to use.

Cook the pasta in boiling, salted water for about 3-5 minutes, or until silky and cooked al dente.

fettuccine carbonara with green beans

our yard is bursting with glee at the moment: there are adolescent popcorn stalks, herbs that are putting up a good fight, enough squash blossoms to feed your extended family, endless leaves of lettuce, chode-ish cucumbers, kale, almost-red tomatoes, and a crap ton of the prettiest wildflowers i ever did see.

can i tell you something though?

i have never been more afraid of vegetables.

in the past month, i've eaten more bread and cheese and less vegetables than i'm really at liberty to say without cringing and patting my belly. i've just been such a sissy about the bugs and the whole washing/salad-spinning process, and of course i refuse to buy any salad greens at the grocery store because there are so many in our garden.

so, my salad intake has been at an all time low, but i've had spurts of courage that help me go out and pick some things that are easy to inspect for bugs. you know, vegetables that don't hide secrets: green beans, tomatoes, cucumbers... and i thought that onions were fine, but then a small friend crawled out of one earlier this week and i did a little nervous dance for all of my imaginary friends to see before placing it down the drain, followed by a drizzle of bacon fat.

i feel guilty now...

this pasta showcases our green beans, which have been very good to us. it's a variation on a simple carbonara that i've made tons and tons of times and grown extremely partial to. i typically refrain from ordering carbonara at restaurants because i've had one too many versions with lots of heavy creamy that make me feel like a roly poly after just a few bites. in its bare bones form, my favorite carbonara is bacon (or other salty meat), a heavy dose of pepper, some parmesan, and a beaten egg, cooked by the heat of fresh pasta. ad lib onions and other vegetables.

i like carbonara like i like my men: eggie, comforting, and difficult to get sick of.


fettuccine carbonara with green beans

makes about 4 servings

ingredients

salt

4 strips thick cut bacon

1 medium onion, chopped

1 heaping cup of chopped green beans (or peas)

8-9 ounces fettuccine*

2 large eggs

black pepper

parmesan, to taste

 

*to make this gluten free (for a certain mr. eggboy), i've been using and loving cappello's almond flour pasta

clues

set a large pot of salted water on the stove so that it can come to a boil while you cook the bacon.

in a large skillet, crisp up your bacon. transfer it to a cutting board, let it cool slightly, and chop it into 1/2-inch pieces. set it aside. meanwhile, drain off all but about 2 tablespoons of the bacon fat from the pan and then set it back on the stove, over medium heat. cook the onion in the fat until it's soft, about 5 minutes. (if your water is boiling by now, it's probably best to add the pasta at this point.) add the beans and a pinch of salt to the pan with the onions and cook, stirring occasionally, for about 3 minutes, or until desired doneness.

crack your eggs into a small bowl or measuring cup and beat them up with a healthy dose of black pepper. i use around 15 turns of the grinder. keep this mixture standing by.

turn the heat under your onion/green bean skillet down to low. (if the pasta still needs to cook more, you can let the onions and green beans hang out, stirring occasionally.) when the pasta is ready, use tongs to transfer it directly into the skillet. it's ok (good, in fact) if some of the pasta water sneaks in there.

fold together the pasta, onion/green beans, bacon, eggs, and parmesan. add pasta water as desired. adjust seasonings.
